What's a Tube Pan?

A tube pan is frequently called an angel food cake pan. It has a cylindrical tube in the middle of the pan, which allows for even baking of the cake. Tube pans are used for angel food cake, sponge cake, chiffon cake, and may be used for other types of cakes. Typically, a tube pan is constructed of one piece of metal and doesn’t have a removable bottom.
